Ingredients
- 3 small Gala apples, cored and chopped
- Juice of ½ small lemon
- ⅓ cup whole rolled oats
- ⅓ cup chopped walnuts
- ¼ cup spelt or whole wheat flour
- ⅓ cup brown sugar
- ½ tsp. cinnamon
- ¼ tsp. ground cardamom
- ¼ tsp. salt
- 3 tbsp. butter or hardened coconut oil
- ¼ cup dried tart cherries or cranberries, optional
- Ice cream, for serving
Instructions
Preheat the oven to 375°F. Lightly brush the bottoms of four small ramekins with coconut oil.
In a medium bowl, toss the chopped apples with the lemon juice.
In a separate small bowl, combine the oats, walnuts, flour, brown sugar, cinnamon, cardamom, and salt. Cut the butter or hardened coconut oil into small pieces and work it into the mixture with your hands until combined but still crumbly.
Mix the apples and dried cherries or cranberries, if using, with half of the crumble mixture. Divide evenly among four ramekins and sprinkle the remaining crumble over the tops.
Bake for 35 minutes, or until the apples are tender and the topping is golden brown. Let cool for 15–20 minutes before serving with a scoop of ice cream.
TIP: Try it with pears, peaches, or mixed berries for a seasonal twist. For a vegan version, use coconut oil. For gluten-free, substitute oat flour for the spelt or whole wheat flour.
